Foods without extra fats

When we start watching what we eat, we tend to remove fat from our dishes and cooking, thinking that there aren't any appetising alternatives to boiling, which means we end up getting bored with everything and throw in the towel.

There really is life after boiling and grilling foods, controlling the amount of fat we use, so we can make flavourful dishes that are healthy, too.

  • On the grill or in a pan, use juice or a bit of broth when cooking fish. You can use the papillote method in the oven or on the stovetop, locking in the delicious natural juices of the fish.
  • In the oven, you can roast fish and meat on a rack to get rid of excess fat, taking care with the cooking time to avoid it drying out. You can baste it with stock to keep it from drying out or cover it with a thick layer of fresh vegetables with a high water content to help keep it moist. Another option is to use plastic baking bags to trap in the steam, keeping the foods from drying out, and also allowing you to add spices to make it much more delicious.
  • Steaming is also a healthy alternative, as its locks in the food's natural properties. You can steam vegetables, grains, fish and white meat.

Experiment with these different techniques to find the one you like best. All you need at home are these tools: a large pot for steaming or specific silicone recipients for the microwave, ceramic or Teflon pans, a wok, baking paper and bags, etc. And don't forget the spices, citrus and vegetables to add moisture to your dishes.
